1 cup creamy or chunky peanut butter
1 cup sugar + extra for rolling the cookies in (about ¾ cup)
1 large egg – beaten
1 teaspoon salt
1 teaspoon baking soda

¾ cup carob chips (chocolate chips can be substituted)
Preheat oven to 350°
Line sheet pans with parchment paper
In a standing mixer add sugar, peanut butter, egg, salt and baking soda
Mix until well combined
Add carob chips; mix to combine but don't over mix
Measure approx 1 tablespoon of dough and roll dough into a ball - roll dough in sugar
Place dough on sheet pan - spacing approx 1-inch apart
Gently press dough down to make small dishes (approx ¼ thick)
Bake cookies for approx 15 to 20 minutes, or until they're a lightly golden
Cool on sheet pan, then gently remove & cool completely on cooling rake
Yields about 2 dozen cookies
