1 cup powdered sugar
Melt the chocolate and set aside
Combine the sugar & oil in mixer, with the paddle attachment and beat mixture until white in colour
Add the chocolate and stir until smooth & silky
Add the eggs, one at a time & the vanilla
Add the flour, baking powder & the salt. blend mixture until smooth, scrap sides with a rubber spatula.
Cover dough with plastic wrap and refrigerate for 1 hour
Preheat oven to 350º
Line sheet pans with parchment paper
Place the powdered sugar in a bowl
Remove the dough from refrigerator and divide into 36, slightly heaping tablespoon size pieces
Gently roll in the palm of your hands to make cookies into balls
Roll each cookie in the powdered sugar, turning the balls, to completely cover them with the powdered sugar
Place 12 balls on each sheet pan, bake in the center of the oven for 12 to 14 minutes
Cool the cookies on the sheet pans for 30 minutes before removing and placing them on racks to cool completely
Store in airtight container
