CHOCOLATE QUICKIES

¡ 2 cups flour
¡ ½ cup un-sweetened cocoa powder
¡ 1 tsp. ea. baking powder & salt
¡ 8-oz sweet butter, cut into 1-oz pieces
¡ 1 cup sugar
¡ 3 large eggs
¡ 1 tbsp vanilla
¡ 2 cups semi-sweet chocolate chips


Pre-heat oven to 350º
Line sheet pans with parchment paper

Sift together the flour, baking powder, salt & cocoa powder set aside


In an electric mixer w/paddle attachment, cream the butter & sugar together.

Add the eggs, one at a time and the vanilla

Gradually add the flour mixture to the batter, then the chocolate chips

Using a heaping tablespoon of the dough for each cookie, (1¼-oz)
Portion 12 cookies per sheet pan lined with parchment paper, (or on a non-stick pan)

Bake for 10 to 12 minutes

Cool on sheet pan 30 minutes before removing cookie to racks to cool completely

Store in airtight container
Yield: 3 dozen 2½-inch cookies
